In the heart of Castagniccia, quality-conscious Benoit Rinaldi raises his AOC pigs in the traditional Corsican mountain way. He releases them during the gleaning season for a chestnut finish. The charcuterie is then matured in the cellar. Prizuttu, lonzu and coppa acquire an incomparable flavor. Visits by appointment from September to June.
