Gault&Millau's review

Butchery Admittedly, for those from Rouen, it’s a bit of a climb up to Bihorel, but Olivier Hallouin’s shop—located on the square where the Saturday market is held—is always worth a visit. That’s because the butcher still makes the best blood sausages and rillettes in the metropolitan area, not to mention his country-style pâté and head cheese. And the butcher is no slouch either, offering a fine selection of Normandy beef, veal, and free-range poultry—including chickens and guinea fowl.
