Although they've been self-employed since 2014, Alisson and Manuel Robillard have invested in this new, larger premises from 2022, in order to offer their customers a wider range of delicacies here, near the Calais citadel and the beach. The company's flagship creations include the emblematic trompe-l'œil that Manuel creates according to his inspiration, not forgetting his 50-flavored chouquettes (6 fixed and 6 ephemeral every week), individual macaroons and ice creams in jars. On the bakery side, a baguette made with rye sourdough (artisanal flour from l'Artésienne de minoterie) and fermented for 24 hours, and a dozen special breads including Scandinavian, with its brown crumb tasting of hazelnut and cereals, Cheddar-maïs, Maroilles and Provençal, are a favorite with gourmets. But croissants filled with bueno, nutella, raspberry and chocolate praline are the unanimous choice of young people. Baker-patissiers have come up with an original snack: a brioche in crown format, to be shared as an aperitif and dipped in your choice of cheese. Custom-made wedding cakes.
