Guillaume Schou, a young baker with some twenty years' experience, had the good idea of using his name to get himself noticed and showcase a range of very well-made products. Choux pastry... choux pastry has taken its place in the window (Paris-Brest, religieuses, classic éclairs and seasonal eclairs), alongside tarts, macaroons and impressive chocolate sculptures.
