Bakery
Mind you, this isn't just a bakery. It's also an art gallery where local artists exhibit (and sell) on a rotating basis, a zero-waste delicatessen, a book depository... Here, most breads are made with homemade sourdough or yeast, using traditional bread-making methods that are slow and respectful of the flours (all organic). The house specialty is petit-épeautre, baked on yeast poolish.
