Admittedly, the craftsmanship of the early days has given way to a more "industrial" way of working. What started out as a small bakery and patisserie (established in 1954 in Château-Gontier, Mayenne) has grown into a group of some 50 stores throughout France. But good manners have been preserved, the famous "croquant" recipe (an aniseed-flavored cookie whose recipe was bought from the hospital sisters in 1975) has not changed one iota, and we also confess to a weakness for truffles, available in several flavors.
