Producer Mikaël Morizot represents the fourth generation at the helm of Essonne’s very first watercress farm—and undoubtedly its oldest, having been founded in 1854. Two varieties of watercress are grown there: the green variety—the traditional one—and the purple variety. A niche crop, his watercress graces the tables of many chefs.
