Mikaël Morizot represents the fourth generation at the helm of Essonne’s very first watercress farm—and undoubtedly its oldest, having been founded in 1854. Two varieties of watercress are grown there: the green variety—the traditional one—and the purple variety. A niche crop, his watercress graces the tables of many chefs.
