Didier Champeix followed an atypical path, switching from chocolate-making to butchery, following a meeting with Yves-Marie Lebourdonnec. He sells Salers beef and veal direct from his family's farm in Junhac, Cantal. Customers have been quick to adopt this Cantal breeder-butcher.
