Butchery François-Xavier Craquelin is one of those craftsmen who have the good sense to go and see what's being done elsewhere, to bring back astonishing ideas. The world's most famous meat, Kobe beef, inspired him to create a speciality that's right up Normandy's alley: beef with cider! Drinking 15 litres of cider a day, the cattle produce tender, full-flavoured, marbled dark meat, which expresses its full potential after some twenty days' maturing.
