The world's most famous meat, Kobe beef, inspired him to create a speciality that's right up Normandy's alley: beef with cider! Drinking 15 litres of cider a day, the cattle produce tender, full-flavoured, marbled dark meat, which expresses its full potential after some twenty days' maturing.
