On a charming pedestrian street in the medieval town of Chevreuse, Marc Chenue, a master syrup maker, transforms flowers, fruits, spices, and plants—all of which he knows intimately—into exquisite syrups in his vats. Through macerations, infusions, and other decoctions, he creates a wide variety of syrups with traditional, unusual, or rare flavors, such as fennel-lime syrup, greengroper-tonka bean syrup, and citron-bergamot syrup.
