Yves-Marie Le Bourdonnec, former star butcher, has moved to Bouhy for the pleasure of reconnecting with his original trade. An unexpected opportunity for this village, which benefits from the installation of a butcher formerly dubbed by the New York Times as "the best butcher in the world", taking advantage of his network to source quality livestock. His mission is also to pass on his knowledge, which he does with Thomas Vey, a young man as passionate as he is promising.
