Bakery After spending several years in Attichy producing organic cookies sold on-site and at dozens of retail locations throughout France, Isabelle and Benoît set their sights on bigger things. Their shop in Couloisy, a few kilometers from Compiègne, is well-stocked with cookies organized by line: Giraffe, Squirrel, Ram, Impala, Bear, Peacock, Fox, Mouse, and Porcupine. But they’ve expanded their expertise to include baking, and it’s been a huge success: 100% natural sourdough breads, made from local stone-ground flours, such as the Rustik, the rice and seeds bread, or the soft, gluten-containing peasant bread that’s perfectly digestible.
