A shop in Cernay-la-Ville, where it all began; another in Paris’s 17th arrondissement; a chocolate shop in Dampierre-en-Yvelines; and an adjoining tea room, Mélanie and Arnaud Mathez spare no effort to delight pastry lovers. While the pistachio and orange blossom tart—with its soft, melting pistachio praline center—catapulted them into the spotlight, it shouldn’t overshadow their macarons, spreads, hazelnut tart, vanilla tart, or Madagascar vanilla flan.
