No ordinary baguette. Only a nicely crusty traditional baguette, and some fifteen loaves that are mass-fermented (rather than pre-weighed), which means that the dough is well rested (at least 12 hours), especially for the Cigale, a sesame baguette with a hint of roasted hazelnut.
