Moulin Saint-Jean is recognized by gastronomic professionals. Olive oil is now an integral part of the plate, showcased by chefs as a raw product, while the Sourdon family has been working for 10 generations on an authentic PDO oil from the Vallée des Baux. Magali is a master miller and Anne is in charge of promotion. The structure remains deliberately small to ensure consistent quality, with the oils divided between two vats to harmonize production and ensure quality.
