Pastry
Jean-Luc Constanti, formerly of Lenôtre and Hermé, runs the family business founded in 1932 by his grandfather. He has added pastry-making, chocolate-making and confectionery to his bakery business, and his work is now widely recognized, well beyond the borders of Béarn. His superb fruit tarts include a raspberry tart with a deliciously crisp pastry. Also noteworthy are his petits fours with marzipan and candied fruit.
