Set in the heart of a 7-hectare park featuring a pond, this 12th-century Cistercian abbey has retained its bright and serene atmosphere. Beautifully restored by the Cummings family, the property was converted into a hotel in 2005 and now features 20 rooms and suites. Spread across the abbey, the former nuns’ quarters, and beautiful outbuildings nestled in the grounds, they all offer the historic charm of their four-poster beds and floral tapestries, combined with a few contemporary touches. A member of Relais & Châteaux, the abbey also houses the Bistrot des Moines and the restaurant Le 1131, where you can savor Guillaume Keller’s exquisite cuisine in a breathtaking setting: a dining room with ribbed vaulted ceilings, arches, and columns, bathed in the soft light of stained-glass windows. Halfway between Beaune and Dijon, a rare gem.
