There’s a chef at the helm and a cook: Martin Maumet makes the right choices when it comes to seasonal ingredients and crafts a concise menu that’s both creative and thoughtful. And a distinct personality that sets this restaurant apart from tourist traps and passing fads. The appetizer platter varies depending on market availability; the Axuria veal from the Basque Country is served with white asparagus and a rhubarb-chili condiment, green pistachio curry; the cheeses come from Terroir d’avenir; and the coffee gelato with pear coulis and creamy anise-infused citrus brings the meal to a refreshing close.
