It’s a staple of Basque cuisine in the Marais. In the kitchen, Renaud Marcille meticulously prepares traditional recipes, the execution of which reflects his impressive background at the Ferrandi School and at Senderens. The menu focuses on the essentials, and the dining experience is always a pleasure: baby squid fricassee with Espelette pepper, cod with chorizo and seasonal vegetables, Espelette-style veal axoa with steamed potatoes, apple and prune tourtière, and Armagnac ice cream. Good service.
