Chef's Restaurant
It’s a large Provençal house in a developed neighborhood on the outskirts of Avignon, with its own distinctive style and high standards. Everything here is pleasantly old-fashioned, and if one were to overlook the hefty prices, one would find all these vestiges of a bygone era charming: the muted piano, the small checkered windowpanes, the traditional uniforms of the staff, the laminated menus, and the stentorian voice of the maître d’hôtel, who, when addressing a table, makes sure the rest of the room hears every word. Madame Boucher stops by to say hello to everyone, including the regulars, informing newcomers of her husband’s 42 years of loyal service—he has chosen a young chef and a pastry chef to assist him. The lightly smoked trout from Isle-sur-la-Sorgue is delightful with its tangy berries; the squab is cooked to perfection, with its confit thigh, a shallot Tarte Tatin, and well-cooked small chanterelles, followed by a classic, school-style dessert: pear and buckwheat. The wine cellar is classic and rather expensive, featuring a vertical tasting of Rayas and Rhône grands crus, along with a wide selection by the glass.
