The restaurant is well known to all the residents of Bray and Cauchois who, long ago, used to come there for their wedding receptions—back when it was located in Val de Saane. Mélanie and Alexandre, who had successfully revitalized the business, moved it to a welcoming rural haven—a contemporary setting in a beautiful Norman house, surrounded by meadows, woods, and rivers—thus making it one of the region’s most charming restaurants. The chef takes great care with his ingredients and adds a creative touch to every plate: sardines wrapped in brick pastry with sardinade from a siphon and kombu; pan-seared foie gras in a mushroom broth cooked on a plancha; lobster pasta; roasted pigeon with a pearled jus; and honey-candied apricots with meadowsweet… Mélanie shines at the front of the house and is expanding the wine list, featuring a beautiful selection of French wines.
