With strong support from Élodie, the chef serves up bistronomic cuisine that’s authentic and approachable, particularly on the Normandy menu, where you’ll find Pays d’Auge confit trout with zucchini purée and apple-dill sorbet, Vallée d’Auge chicken, potato espuma, mushrooms, and apple relish, as well as a delightful take on teurgoule.
