Traditional yet modern Southern cuisine, as only Julia Sefedjan knows how to serve it, with a decidedly indulgent twist. The young chef is a master of her craft, offering skillfully curated menus ranging from €65 to €155; the number of diners willing to put their trust in her remains as high as ever in this understated and elegant setting. Take, for example, the beautiful Signature menu, which begins with “cagades,” followed by egg and haddock, her personal take on bouillabaisse with octopus and fennel, poultry with shallots and Urfa pepper, brocoletti and reduced sauce, and figs with amaretto cream, red berry sorbet, and beets… The atmosphere is that of a contemporary fine-dining restaurant, with a varied wine cellar offering pairing suggestions.
