This 3-star hotel on the hills above Lake Bagnoles is practically an institution, offering its old-world charm, half-timbered walls, and bourgeois atmosphere to a clientele that’s already won over. The moment is almost solemn in this carpeted room with stained-glass windows, where tradition reigns supreme. The menu features the classics: smoked sea trout, buckwheat blinis with sorrel cream, fresh catch of the day with sauce vierge and ratatouille, yellow chicken from Passais Villages, Darphin potatoes and Swiss chard, and a Fontainebleau cake with vanilla and candied rhubarb.
