Anne-Sophie Pic’s former restaurant has become the Four Seasons brasserie—in other words, a restaurant offering a modern take on traditional cuisine under the direction of experienced chef Armando Acquaviva. With a truly detailed menu, he allows discerning diners to choose according to their tastes, with options ranging from fine ingredients to more rustic fare: semi-cured foie gras, peaches and Hautes Glaces whiskey, semi-cured Arctic char with zucchini and agastache, Aubrac beef tenderloin Rossini-style… When it comes to dessert, the talented Jonathan Chapuy takes center stage; he has been delighting us for several seasons now with enticing creations such as profiteroles with a meadowsweet ice cream center, passionflower tagetes tiramisu, and a peach-verbena-Mont Blanc gin baba
