Don’t miss the asparagus rolls with pointed cabbage, fennel sauce, fresh herbs, and Béarnaise sauce; the wild garlic and basil pistou soup with fava beans, green asparagus, ditalini rigati, fresh peas, green beans, and Parmesan grissini; a puff pastry vol-au-vent; veal blanquette with confit, chicken sauce, creamed spinach, spring vegetables, mushrooms, carrots and leeks, or even a Fontainebleau with strawberry meringue and a buckwheat and lime shortbread.
