Since May 2025, Italian chef Attilio Marrazzo, who trained with Joël Robuchon, has been in charge of the menu and, we hope, will put an end to the waltz of chefs. The blend of two cultures results in an authentic, responsible cuisine of great finesse, as in this return from the market with thin slices of radish and beet in a yuzu vinaigrette, followed by delicious pumpkin tortellini on a light mushroom broth. From the amuse-bouches with warm bread and homemade focaccia, to the olive oil infused with garden herbs, everything is delicate and refined; the desserts are on a par with a light pavlova, mandarin cream and orange juice reduction without excess sugar. The wine list is prestigious, and prices soar in this 15th-century château with its majestic view over the Loir, immediately earning back its two toques.
