There are still a few good eaters left in Rouen, who know how to recognize a quality of meat, how to be delighted to see "langue de chat" (cat's tongue) written on a slate, how to salivate at the idea of a good veal kidney. It's all on offer at Tony Pochon's, a unique owner with more friends than customers, a lover of offal, Lyonnais cuisine and friendship at the table. A plank of cochonnailles makes the aperitif, before the rolled pig's head from Bobosse, brandade de lieu, sweetbreads and teurgoule. And there's always a gorgeon of Beaujolais or Mâcon to accompany all this goodness.
