Mathias Leuliette, in his own way, is faithful to both his producers and his customers. Since his first attempts (it was Demain, it's now Après-Demain), he has maintained the young and audacious idea of permanent surprise, of experience, of this game between blindfolded customer (it's an image) and cook deciding on the possible surprises in a €75 or €100 menu. There's no doubting the sincerity of the message, the ingredients are seasonal, the ideas often surprising, and the effort put in is definitely worth keeping your chef's hat on. The promise kept: to support responsible agriculture and a local, respectful economy. From amuse-bouches like a floral composition to an all-chocolate dessert simulating the burning Landes forest, asparagus in cold or hot versions, apple boudin in bite-size portions, foie gras from the South-West in a lacquered duck style, rack and saddle of lamb, lamb jus, piperade with chorizo, not forgetting the croissant with Petrossian caviar and gold leaf. A varied choice of wines from different regions and Europe, with a prestige selection.
