In the heart of the Gers, Patrick Duler makes it a point of honor to work with the most local products possible, right down to the truffles from his own truffle oaks in season. It's a family affair in every sense of the word: Pascale offers a warm welcome, their daughter takes care of service in the dining room and their son officiates in the kitchen, in this 15th-century farmhouse. The meal, unique and hidden, is priced at €147, a high price for a sincere and generous traditional cuisine, of which the most memorable moment is the ham, matured for sixty months on site, of remarkable intensity.
