Right in the heart of Granville, Jonathan Datin’s restaurant is one of the best places to discover the full potential of Normandy cuisine—rooted in its local traditions yet open to the future. Having worked alongside Franck Quinton, he possesses the experience, skill, and open-mindedness to reinvent the local culinary tradition. His €70 menu is full of memorable creations, such as the lobster medallion with tomato and citrus, sweet-and-sour vinaigrette; the pollock with herbs, shavings of colorful zucchini, eggplant caviar, and gray shrimp consommé; the duck breast with beets, sweet-and-sour cherries, and salted popcorn; and finally, a strawberry-rhubarb pavlova, elderflower ice cream, and a hint of hibiscus.
