In the land of cherries, in the heart of Vallespir, Kevin de Porre has found his home and named it after the trout he used to fish for with his grandfather. He has been thriving ever since leaving Paris and Contraste, where he worked alongside Erwan Ledru in the kitchen; here, he finds fulfillment in living in harmony with the Catalan and Pyrenean countryside, with the ingredients he loves to work with right at his fingertips. The approach is sincere—though not entirely without constraints, since the menus are fixed-price set menus at 115 and 150 €, plus a 55 € lunch—and quite delightful, both on the plate and in the atmosphere.
