At the heart of the sumptuous Terres Blanches estate, with its 5* hotel, golf course and spa, Quentin André's restaurant contributes fully to the house's excellent reputation, with its fine Provencal fare that's both fair and sophisticated. The chef doesn't just offer hotel-style cuisine based on the finest produce, but also develops a real sense of the terroir, with local vegetables au naturel, herb condiment from the kitchen garden and miso squash vinaigrette, Olivier Bardoux's return of the peach, beans from the kitchen garden, fermented plums and basil velvet, roasted Alexandre farm duck, duck breast with fig leaf, Haut-Var corn and tangy fig, polenta parmentier thighs, foie gras and full-bodied jus, and finally a mildly infused Catuai coffee, Duplanteur 85% chocolate ice cream, cocoa bean praline, coffee emulsion, cascara crunch and mucilage.
