A name and reputation aren’t always enough, but in Flavio’s case, they certainly help draw in longtime regulars and enticed tourists. The restaurant has successfully maintained its reputation thanks to a menu that reflects current trends: tuna ceviche with guacamole and raspberry sorbet, cordon bleu with aged Comté cheese and mashed potatoes, Provençal-style roasted turbot with eggplant and cockles, and a good selection of seasonal desserts, such as peach with verbena, apricot with almonds, strawberry-basil macaron…
