In the heart of Guéthary, Chef Claude Calvet offers hearty, regional, and seasonal cuisine in a family-friendly and relaxed atmosphere beloved by regulars. Here you can enjoy a delicious pâté en croûte, mushrooms and cherries marinated in vinegar, sloe cherry chutney with Patxaran, white asparagus from the Landes region roasted on the plancha, a perfectly cooked organic egg, Maltese spoom, and trout roe as a starter, followed by the catch of the day depending on the fish market, Sardinian frégola risotto with garden herbs and Iberian paleta, Noilly Prat sabayon, or veal blood sausage with sweetbreads and morels, pan-seared foie gras escalope, creamy “Grand Roux” corn polenta with hazelnuts, roasted chicken jus, followed by a vacherin made with local strawberries and cardamom-scented pineapple, shards of burnt lemon meringue, verbena cream, strawberry gel, and sorbet.
