Chef's Restaurant
The Bonano brothers always go above and beyond to offer us a memorable, almost unique experience in this superb dining room where granite, wood, wine, and—above all—Benjamin shine. He has a natural knack for finding just the right words to describe their world and his brother Clément’s cuisine. His expert—and at times even intoxicating (in moderation, of course)—recommendations are a treat for wine lovers; and it must be said that the selection is vast! Clément, whom you can see from the dining room, puts his experience and expertise to work on dishes that are each more generous than the last, yet all equally easy to appreciate. We find ourselves thinking back to that lightly poached oyster with its granita—to be enjoyed without restraint… The pearly Grau-du-Roi prawn in a mousseline sauce, served with basil-zucchini gazpacho, or the Pyrenean lamb with roasted candied eggplant, sautéed chanterelles, and lamb jus. Clément is no slouch in the kitchen either, as he bakes their excellent bread on-site himself, as well as a very tasty focaccia… Surrounding them is a wonderful team—young, attentive, and perfectly in sync—to round out this beautiful culinary composition.
