One of the gems of the Eclore group, for which casting is a priority—as evidenced by its well-known successes. Here, it is now Yoshitaka Takayanagi who carries the torch for modern and innovative cuisine. It’s also a special dining experience at an affordable price, thanks to tiered set menus—ranging from €68 to €188—that draw from the current menu and showcase the full range of flavors to great effect. Dishes include, for example, tuna tartare with a hint of Granny Smith grapefruit and kefir; flame-seared lobster with sobacha, apricot, and verbena; and duck breast with artichoke stuffed with piperade and a robust jus, paired with Mara des Bois rhubarb, elderflower, and Sichuan emulsion. The service is elegant and courteous, and the wine cellar remains as impressive as ever, with wine pairings available for all set menus.
