Bourgeois chic and refined manners abound in this city mansion on the circular boulevard. Jordan Billan’s confident cuisine consistently reaches the highest standards, showcasing fine seasonal ingredients: white asparagus salad with Morvan Cazette potatoes and foie gras, langoustines and Baéri caviar, crispy monkfish with grilled pak choi, whipped butter, anchovies, and tarragon mustard, pigeon on a hay-smoked chest with confit thigh and a reduced blackcurrant berry sauce. A work of art, meticulously crafted right down to the desserts (strawberry and verbena, chocolate baba…), priced like royalty (around €150 à la carte) and backed by an extensive cellar of the most prestigious vintages.
