Meticulous workmanship, Japanese-style preparations just as you'd expect, a fine commitment and service full of delicacy and a smile, this restaurant is indeed one of the best in its category. The evening menu is imposed but not hidden, with a dish to choose from: high quality kobachi and sashimi, expertly sliced, good pork confit with mustard, oyster with ponzu sauce, the main course, merluchon with yuzu gribiche sauce, is worth all the praise on its own and confirms the two toques, for its overall quality and perfect gribiche with discreet yuzu. The work is a little time-consuming (two people to do it all), but the moment passes quickly.
