Remarkable Restaurant
A few months after receiving the “Grand de Demain” award for the Nouvelle-Aquitaine region, Martin Isabal has confirmed that he is indeed one of the passionate champions of the new Basque cuisine—a cuisine that draws heavily on its roots, recipes, and local products to evolve with the times. The young chef deserves as much attention as he does praise: the great, purely Basque family establishment is now home to great talent in its third generation—Martin in the kitchen and his brother Louis in pastry. From luxurious accommodations to the bistro and fine-dining restaurant, everything is set for an immersive stay. At the table, modernity is sprinkled over tradition, with foie gras and kintoa, Basque dashi and fermented cherries, the catch of the day with green beans, chanterelle mushrooms, and ajo blanco, veal grenadin with garden vegetables, olive oil-candied apricots with acacia sabayon and almond ice cream… A superb tasting menu for €135, complemented by an extensive wine cellar that, of course, offers a wonderful selection of regional wines.
