Chef's Restaurant
From bars to bars, from cellars to cellars, from restaurants to restaurants... this hypercentre street offers a festive and gourmet mix. With an international background, Noé Vivies and Lucy Rosedale have taken over an old bistro, renovating it with warmth, using stone, wood and pleasant lighting. A harmonious soundtrack adds to the relaxed atmosphere. The cuisine is playful, lively and very accurate, expressing itself through dishes with lively, perfectly blended flavors. The talent is there! A case in point are these thin slices of raw horse mackerel, which allow Noé to play delicately with bitterness, acidity (clementine, kalamansi, kumquat) and saltiness. To follow, the perfect one-sided barbecued pollack is caressed by a subtle mussel emulsion with saffron notes. Carrots and parsley chlorophyll complete the dish. Finally, the dessert, without exuberance, confirms the brilliance of this new table with a marriage of pear, cookie, spices and laurel ice cream. Cheerful, friendly female service. As for Lucy's small, passionate cellar, she's right on target with, for example, Domaine de l'Alezan's Côtes-du-Rhône and Mathilde Magne's Anjou.
