L'arborescence is much more than just a name. Since moving in in August 2024, Jennifer and Loïc Deletraz have renamed their elegant mountain home on the shores of Lac des Dronières, L'Ancolie. They have chosen a unifying theme: the tree, symbolizing both nature and their relationship as a couple. The hotel and restaurant offer zen-like comfort, with original driftwood decorations. When you look at the menu, you'll see that the tree is back in the spotlight, with a presentation of the regional producers who are its roots and the entire team who are its lifeblood. So it's only logical that the cuisine on offer is mainly local, with trout from Charles Murgat and pigs from Ferme des Crues. The chef also knows how to get off the beaten track with, for example, tofu, marinated in whey brine, soybeans with sesame oil and a vegetable broth reduction with butter. Careful attention is paid to textures, and there's no desire to spoil anything, since the little cakes that crunch and brighten up the dish are made from soy husks. The staff are friendly and efficient. Lovers of wine by the glass are well catered for, with a selection from the à la carte menu and a host of prestigious wines on offer thanks to the D'vine system.
