Facing the Bay of Arcachon, the Hôtel Les Vagues restaurant combines an exceptional setting with sincere cuisine. In a room bathed in natural light, chef Gaël Derrien creates a short, precise menu, faithful to the seasons and local produce. The "œuf façon meurette au lard paysan" is seductive in its depth, the "magret des Landes rosé sur embeurré de chou et carottes croustillantes" confirms a fine technical mastery, and the "fraîcheur au citron vert, sans sucre ajouté" closes the meal with a disarming purity.
