This young Gault&Millau-recognized talent has found his stride and his niche, championing an authentic Burgundian dining experience. We keep coming back for the parsley-crusted ham, poached eggs with Chardonnay sauce à la meurette, cod fillet with seared green asparagus, barigoule sauce, and wild garlic pesto, and a Corton pigeon: the grilled breast, the confit thigh, and the wing as a croquette, or even a classic beef bourguignon.
