Rue du Hâ's gourmet reputation continues to flourish with this Fine Bouche, which has been delighting diners for three years thanks to chef Matthieu Goguet and his team of warriors. His current menu is always full of seasonal ideas, and the sequences are coherent and inspired, at €70 and €85 depending on the number of courses: poached white asparagus with broad bean and wild garlic condiment, pearly cod with sage oil, celery tagliatelle hollandaise with lovage, peas and green apple with tarragon (a successful marriage), meringue and yoghurt ice cream.
