In a chic barn setting, an open kitchen where Alexandre Papin reveals himself day after day as a passionate chef, in love with products superbly showcased in plates where the pleasure of the eyes precedes that of tasting. In a short menu, the ceviche of sar from our coasts is revealed around radishes and a smoked cream before a melting and pearly skrei cod just accompanied by an emulsion of cockles, a cabbage bichotte with an incomparable taste and strips of rutabaga with piment d'Espolette ; desserts are up to scratch, with a fresh selection of citrus fruits such as kalamansi and citron lemons; the wine list is intelligently built around wines that respect the living world, with a focus on carefully selected grape varieties and winegrowers: A Fiefs Vendéens sits enviously alongside a softly-priced Jasnières. Another plus point for this creative, up-and-coming chef, who openly shows off his producers, whom he calls his "collaborators", a fine image of sharing.
