For nearly forty years, this restaurant has been at the top of its game in the department thanks to this honest and sincere chef, who has, above all, known how to evolve his cuisine over the years, take his environment even more into account, and embrace a sustainable approach. Each dish is meticulously crafted, flavorful, and perfectly executed, while prices never skyrocket: a variation on Charente melon with Pineau gel and duck ham; langoustine “bouchons” in fish head jelly; crispy langoustine claws with lovage mayonnaise; a slice of roasted monkfish with farm-fresh bacon, vegetable salpicon, and piquillo peppers marinated in a marinière-style sauce—all part of a flawless menu that concludes in style with a tarragon blancmange, black tea-infused peach, peach sorbet, and Charente verjus sorbet, all part of an impeccable €85 menu. The wine cellar features fine Bordeaux vintages but is also well-stocked with wines from other regions; service is always attentive without being overly formal.
