We are making numerous, constant, and consistent efforts to regain our three-star rating, and this year we’ve seen a slight resurgence in form—notably a renewed enthusiasm in the dining room, which Johnny Lebigot has refreshed with flair—to give our best and live up to Rudy Langlais’s ambitious cuisine. The chawanmushi (smoked sardines, Jerusalem artichokes, and shimeji mushrooms this season) is something of a house specialty; the asparagus with a wasabi-infused siphon and velvety cardamom sauce, the expertly prepared pigeon, and the apple tart with caramelized chiboust cream demonstrate a strong commitment and the precision one would expect, in a five-course menu for €119. A tasting menu is available for €189, a rather well-crafted lunch menu for €80, and a comprehensive wine cellar covering the major regions.
