The son of restaurateurs, trained at Ferrandi before learning the basics of the trade under Gordon Ramsay at Le Trianon—just a stone’s throw from La Table du 11, which he opened in 2015— Jean-Baptiste Lavergne-Morazzani seems completely fulfilled today, confident in his craft. In this Cour des Senteurs, where one feels cut off from the world—an incredible privilege in such a touristy neighborhood— our former “Grand de Demain” combines La Cave du 11—a charming wine bistro opening onto a delightful terrace—with this flagship restaurant featuring elegant, minimalist decor, where this chef of Corsican descent delivers cuisine that grows more refined each year, the kind that strikes you right in the heart. There are truly wonderful moments throughout the extensive tasting menu, notably a magnificent pan-seared John Dory, zucchini, and eggplant—both melt-in-your-mouth tender and full of character; a masterful take on onions, served as ravioli with vin jaune; and a braised beef in grand-veneur sauce, prepared in the spirit of a lièvre à la royale, striking a balance between richness and smoothness. The service keeps perfectly in step, clearly delighted to showcase such cuisine to a clientele of many regulars—and we can see why!—and the wine cellar, described with brilliance and passion by the ever-reliable Laurent Beaudoin, has few equals in the Île-de-France region.
