You're immediately struck by William Legros's profound kindness, smiling and enthusiastic, working alone here in his establishment on Rue Christophe Keller. The young chef takes the time to explain his approach and his dishes in the dining room, then heads straight to the kitchen to carry out orders. William Legros is self-taught, intuitive and inspired, offering modern, personal dishes. The menu du jour is a very respectable €27, with a beet and onion salad on grilled toast and goat's cheese à la flamme, surprisingly more interesting on the palate than on the label, well-balanced, well-seasoned and full of texture... Then there's haddock tempura with a good accompaniment of broad beans and asparagus, polenta cream and spices; finally, a lovely dessert based around white strawberries and 70% dark chocolate in ganache, shiso and sponge cake. Very warm service.
